Kathryn “Pepper” Stashek from Bar Kabawa in NYC, shares her perfect Dry Martini recipe which features Roots Divino Bianco, and Amass Riverine, a nonalcoholic spirit, infused with juniper, coriander and mint, that’s a good substitute for gin.
As she describes, adding mouthfeel to non alc cocktails is a lot easier with shaken drinks than stirred ones because you can incorporate richer ingredients, like egg white. But Martinis are stirred. So you need a 50-50 Martini, where vermouth is more dominant, because of its richer body and mouthfeel. And for that, Roots Divino Bianco is the ideal choice.
“Non Alcoholic Dry Martini”
Ingredients:
1.5 ounces Amass Riverine
1.5 ounces Roots Divino Bianco
(.25 ounce mint gomme syrup)
Ice
One ¼-inch thick round lemon slice, for garnish.
Pour the liquids into a large glass, ideally a mixing glass.
Fill the glass with ice and stir for approximately 30 seconds.
Strain into a chilled martini or cocktail glass. Garnish with a lemon twist.
